This is a beautiful cloth-bound cheddar made in the traditional cloth-bound cheddar way.

It’s big and bold after 16 months of aging. When Cabot Creamery asked Jasper Hill Farm to age a special batch of its cheddar, a beautiful collaboration was born. Cabot makes the young cheddar cheese; Jasper Hill's Cellars handle the affinage.

FLAVOR PROFILE: Earthy, a little funky, with hints of butterscotch.
