This is such a gorgeous cheese and new to us. It’s a Dutch style Swiss cheese from Oakdale Cheese & Specialties in Oakdale, CA. Walter and Lenneke, Dutch immigrants, started Oakdale Cheese in 1983. Brining the Dutch cheese making tradition to California. Their son, Jan Dirk, is their head cheese maker now and he and his wife, Jessica, took over the business in 2016.

FLAVOR PROFILE: Sweet and nutty

USE IT: Slice it for a great grilled cheese or cut it up for your cheese plate. It goes beautifully with fresh summer fruits and crisp white wines.
