Red Hawk is crafted by Cowgirl Creamery in Point Reyes Station, California.
We first tried this creamy washed-rind cheese on a trip to the Bay Area the spring before we opened the shop, and it has remained my favorite ever since.
Made with organic cow’s milk, each round is aged and brined to develop a distinct red-orange rind and pungent aroma.
